Pedro Ximenez

Spanish Pedro Ximenez Sherry is the household standard when it comes to sweet dessert wines, Pedro Ximenez is produced in many regions however it is synonymous with the D.O of Montilla-Moriles  in the South of Spain. It is produced by allowing the Pedro Ximenez grapes to dry under the hot Spanish sun, increasing the sugar content of the grape to a level far beyond the level needed for wine making. The result is a sweet, dark intensely flavored liqueur that pairs beautifully with blue cheese.
